A couple weeks ago I finally took a stab at making my own sushi. I had been wanting to for quite some time and had been accumulating supplies very slowly. When me and my roommate decided to try to do a roommate dinner I used that opportunity to try it out. I opted for vegetarian options this first time around, partially because my roommate is vegetarian and partially because I was craving avocado. I also didn’t feel ready to handle raw fish. We decided to do avocado and cucumber rolls, and they were pretty tasty. I paired the rolls with miso soup and it was surprisingly filling. I used the leftover cucumber to make a few extra rolls and they kept well for about an extra day, maaaybe two. I look forward to trying this again soon and maybe incorporating fresh fish.
